


With 25 years experience, Serge Nollent is Young’s Head Development Chef. After his classical training in Normandy, he spent a number of years honing his skills in the renowned Normandy Hotel, in Deauville.
Serge’s cosmopolitan outlook and desire to explore different types of cuisine took him to Italy, Switzerland, Norway and Scotland before opening a seafood restaurant in Yorkshire which was listed in the Good Food Guide. He then took a change of direction, joining Youngs in 1998 where he now creates exciting fish dishes that he hopes will be enjoyed by thousands!
