Young's in Scotland - Scampi |

Langoustine for Young’s is fished from inland coastal waters around the UK, particularly western Scotland and the Irish Sea. We work closely with our suppliers, most of whom are independent local fishermen.
A large proportion of Young’s scampi is landed in Stornoway - a small port on the Isle of Lewis in the Hebrides. Young’s has bought locally caught fresh Langoustine here for many years. These delicious large shellfish are also known as Dublin Bay Prawns or Norway Lobsters. Perhaps they are best known in the UK as Scampi, a popular British dish that was actually invented by Young’s over 60 years ago.
Large whole Langoustines are becoming increasingly prized in restaurants throughout Britain and Europe. Our expertise and knowledge of Langoustines has attracted some of London’s top chefs to visit Stornoway and see what we do. Young’s is proud to now supply some of London’s finest eateries with our Stornoway Langoustines, which are packed and despatched within hours of being landed.
For scampi, Young’s langoustine is processed both in the UK and in the Far East. We have a processing facility in Annan, and one at Stornoway on Goat Island, where the manager is John Nicolson (bottom right). We also peel some langoustine by hand in Thailand, where we have a dedicated team who are highly skilled in this very delicate and specialist task.
Meet our langoustine specialist
John Nicolson is a softly spoken Hebridean. He spent 20 years in the Merchant Navy, and later set up the Stornoway Fisherman’s Co-Op. He has worked for Young’s for many years, and has helped us forge strong working relationships in Stornoway, where we buy around 80% of all the Langoustines landed. Recently, the Young’s Scampi have pioneered a traceability system called Young’sTrace which uses satellite tracking and GPS technology to pinpoint precisely where, when and how every Young’s Langoustine is caught.
It even tells us the name of the boat and the skipper! Thanks to Young’s Trace, we have a highly detailed knowledge of the langoustine fishery and can stipulate strict catching measures, including maximum trawl and haul times to ensure Young’s Scampi is the sweetest, most succulent Scampi you can buy. We also have a close working relationship with a team of top scientists at Glasgow University to better understand the Langoustine habitat and ecosystem trends over time. |
